Mozzarella Stuffed Meatballs & Cauliflower Mash

Lots of protein and low carb! 

Mozzarella Stuffed Meatballs

Ingredients

  • 1 lb. ground beef
  • ½ C pork rinds
  • 2 T Italian seasoning
  • 2 T Worcestershire
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 mozzarella cheese sticks
  • ½ tsp salt
  • ½ tsp pepper
  • 2 T parsley, chopped
  • 1 egg

Directions:

1. Preheat oven to 375 degrees.

2. Place pork rinds in a Ziploc bag and crush completely until a breadcrumb consistency.

3. In a large bowl, mix together the seasonings, Worcestershire, beef, pork rinds, egg, and chopped parsley.

4. While forming the meatballs, place a small piece of the mozzarella inside and form the meatball around it.




Cauliflower Mash

Ingredients

  • 2 bags of cauliflower florets
  • ¼ C chive cream cheese
  • 3 T butter
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp Italian seasoning

Directions:

1. In a pot of boiling water, add in the cauliflower and boil until tender and then drain.

2. In a food processor, add cauliflower, seasonings, butter, and cream cheese and pulse until a smooth consistency.
