Gluten Free Blueberry Pancakes and Loaf

Ingredients
- 2 eggs
- 1 cup almond flour
- 2 tbsp. tapioca flour
- 1 tsp. baking powder
- 1 tsp. vanilla
- 1/4 tsp salt
- 1/4 cup almond milk
- 1/4 cup blueberries
- 3 tbsp honey or maple syrup
Instructions:
- preheat oven to 400F
- mix all ingredients together
- cook pancakes using stove top pan with non-stick spray
- spray loaf pan with non-stick spray and pour in left over batter
- bake loaf in the oven for 30min or until golden brown
