Blueberry Baked Oats

Refined sugar-free blueberry oats
Ingredients:
- 2 cups almond milk (vanilla unsweetened)
- 1 tsp. vanilla extract
- 1/2 cup maple syrup
- 3 tbsp. melted coconut oil
- 1 tbsp. cinnamon
- 2 cups oats
- 1/2 cup blueberries (fresh or frozen)
- 1/4 tsp. salt
- 2 eggs
- 1 tsp. baking powder
Instructions:
- preheat oven to 375F
- combine all ingredients
- use non-stick spray to coat the 9" pie dish
- pour batter into pie dish and place in the oven for 35-40min or until golden brown
